Very versatile

This is an amazing tool that can easily replace any other hand mixer you might use for every task except kneading dough (why anyone would want to knead dough with a hand mixer is beyond me, but I've seen it happen). The button takes very little pressure to engage and it speeds up gradually so as not to jerk itself out of your hand with startup torque. This is good, because once it gets going--even on the lowest speed--it generates a powerful suction you'll have to focus on countering. The slicing blade makes short work of soups and purees and the aerator disc can foam pretty much any dairy product you throw its way in a wink. I haven't tried doing a forcemeat with it myself yet, but it has more than enough power to handle tough proteins. Excessively fibrous veggies, like pandan leaves, are still best handled by bigger motors and bigger blades. Construction is impeccable and there are no creaky parts anywhere; something I've not been able to say about the Waring equivalents I've handled.What really makes this unit stand apart from the crowd is the whisk attachment which produces gorgeous, glossy egg foams and airy mousses you absolutely cannot get from aeration discs. Even though it seems like they're spinning too quickly to avoid over-beating, the thin ribbon loops do far less shearing than you'd expect and are surprisingly gentle, both with your product and your bowl. The manual says it's capable of processing up to 20 egg whites at a time, which is 2-4 cakes' worth depending on what you're making. This should be plenty for all but high-volume cake shops and those that need to crank out dozens of soufflés from a single station. Using a copper bowl, it'll get 8 room temp whites to stiff peaks on the lowest speed in about a minute and a half. Heated whole eggs get to ribbons in about three minutes. Not shabby at all.My complaints are all minor operational quibbles and have nothing to do with the results obtained from the mixer whatsoever:For starters, the bell is just *slightly* too wide to reach all the way down into a typical malt cup, which is arguably the the easiest thing to aerate/emulsify in. It'll still work, it just won't ever touch bottom. Not a big deal.Blade changes involve a little tool that's bound to get lost. A screwdriver will work just as well, but is likely to damage the plastic drive couplers. That plastic is not the brittle junk you'll find on a Kitchen-Aid stick by any means, but it is still malleable. A shaft lock button up near the motor base would be really cool.The whisks are tough to get out of the gearbox. I have yet to figure out how to yank them out for cleaning without slinging product around the counter. A quick release button would be a welcome addition, allowing the operator to just chuck them in the sink without thinking.The splatter guard is made of a soft rubber that is physically difficult to attach and remove, and it clings to flour and lint like a magnet.It doesn't really seem that loud when you're running it, but it *will* leave your ears ringing, so hearing protection may be a prerequisite to extended daily use.It's heavy enough to cause forearm fatigue. Not nearly as much as whipping by hand would, but it's no lightweight.While it may lack some of the tool-free conveniences of a Bamix, it absolutely trounces them in terms of performance and is actually suitable for professional use. I don't know why RC dealers don't actively stock these things so people can play around with them--they're awesome.
